1.5kg frozen mango
1 1⁄2 cup coconut milk
Shredded coconut
Blend ingredients for ice cream together in a food processor until smooth.
You may need a spatula to scrape down the sides a few times.
Heat a small frying pan over a low heat.
Add toasted coconut and heat until brown.
Serve ice cream with a spoon of toasted coconut!
