Chocolate Almond Butter Omelette
This Chocolate Almond Butter Omelette is exactly what your body needs to start the day.

3 eggs
1 medium banana
1 tbsp raw cacao powder
1 tsp psyllium husk
1/2 tsp cinnamon
Pinch of sea salt
2 tbsp coconut or greek yoghurt
1 tbsp almond butter
1 tsp coconut oil
1) Mash 3/4 of the banana into a small bowl. Add the eggs, cacao powder, psyllium husk, cinnamon, salt and mix together until well combined (alternative is to add all these ingredients into a nutribullet and blend until smooth).
2) Melt coconut oil in a fry pan over medium heat. Pour in the egg mixture and cook for 3-4 minutes on one side, flip then cook for a further 1-2 minutes.
3) Transfer omelette onto a plate, add 1 tbsp yoghurt into the middle of the omelette and spread it around. Fold the omelette in half then top the omelette with the other 1 tbsp of yoghurt, almond butter, the remaining 1/4 of the banana sliced up and an extra pinch of cinnamon.
